A moist banana bread that uses Greek yogurt to reduce the fat while keeping it tender.

  1. Preheat oven to 175°C (350°F). Grease or line a 23x13 cm (9x5 inch) loaf pan.
  2. Mash the bananas in a large bowl. Stir in yogurt, oil, eggs, brown sugar, and vanilla until well combined.
  3. Add flour, baking soda, salt, and cinnamon. Fold gently until just combined — do not overmix.
  4. Pour batter into the prepared pan and smooth the top.
  5. Bake for 55–65 minutes, until a toothpick inserted in the center comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack.
