Instructions

1. Blend

  1. Add the chickpeas, tahini, lemon juice, garlic, olive oil, salt, and cumin to a food processor or blender.
  2. Blend for 1–2 minutes until smooth.
  3. Scrape down the sides as needed.

2. Adjust consistency

  1. With the motor running, add 2–3 tbsp cold water one tablespoon at a time.
  2. Blend until the hummus is creamy and light — it should be easily scoopable, not stiff.
  3. Taste and adjust salt or lemon juice if needed.

3. Serve

  1. Scoop into a shallow bowl.
  2. Use the back of a spoon to create a small well in the center.
  3. Drizzle with olive oil.
  4. Sprinkle with paprika or sumac and chopped parsley.
  5. Serve with warm pita bread and veggie sticks.
