Sponge Cake (Rice Cooker)

Made in a Toshiba rice cooker using the Cake setting. A versatile base for tiramisu, trifle, shortcake, or enjoyed on its own.

Method

  1. All ingredients at room temperature
  2. Beat butter and sugar until creamy
  3. Add vanilla, then eggs one at a time, mixing well
  4. Fold in flour and salt gently — do not overmix
  5. Grease the rice cooker inner pot well (or line with baking paper)
  6. Pour in batter and tap the pot on the counter to remove air bubbles
  7. Select the Cake menu and press start
  8. When done, check with a skewer — if not cooked through, run another cycle
  9. Let cool for 10 min before turning out
